DEER DOGS
Nothing to do with a BMH.
Or a Teckle.
Venison hot dogs!
Some nice, lean, roe venison, a little, fresh, pork fat, and half of a small, red onion, all put through the mincer. Freshly ground black pepper, and sea salt, added, to taste.
The meat was left overnight in the fridge, then divided into four. On a floured board, each piece was rolled into a sausage shape.
Back into the fridge until cooking time.
Meanwhile, thinly slice two red onions.
Fry, gently, in a little olive oil.
After about fifteen minutes, add a healthy dash of sweet chilli sauce.
In a heavy based pan, melt a knob of butter with oilve oil.
When it is up to a gentle frying temperature, add the Deer Dogs.
While the Dogs cook, prepare the rolls.
Wrap in foil.
Place them in a warm oven.
I cook the Dogs well done.
Serve, and enjoy.
