With six Mallard and four Pheasants to process this week, I took a gamble, and made a sausage mix.
Unsure of the result, I decided on a small batch.

I am not a fan of designer type sausage, so I bought a Cumberland mix:

Also, some natural, Hog casing.

For my trial run, I used:
450g - Duck breast
250g - Pheasant breast
250g - Pork belly ( fat )
100g - Cunberland mix
100g - Water
I also added extra pepper
It was an interesting exercise.
I made one reel, as a test.
There were a few air pockets, but it cooked well, and did not burst.
Crap pic, but you get the idea.
Very tasty, and well worth the effort.
Next lot will be a 5kg batch.
