Just bought a cold smoke generator, so will get a couple of slabs of salmon, and let you know how I get on :clap: :clap: :clap:

First batch im doing will get a mix of sea salt with brown sugar on it for 24 hours, using a recipe i found on another forum
But will be trying various recipes as I go along , the brine sounds interesting
Also thinking of building a hot smoker :clap: :clap: :clap:

Ray,

I think a second opinion is required guess who is up,for that post?

I have a hot smoker I use it quite a bit in the summer if I have caught anything also good for game as well, great fun trying different types of fruit tree dusts.

Im building my smoker out of an oil drum so it can be used as a hot smoker as well, going to try my own smokies mmmmmm

Ive got an apple tree that was blown over 3 years ago and i have the trunk in my workshop so can see the belt sander coming out

Apple is a nice one to use it gives a nice sweet taste to the fish.
